WHAT WE DO
Education, Consulting, & Community Supported Chocolate
Workshops in Cacao & Ethnobotany
Mr. Brian Wallace is a regular educator on all things chocolate - from sustainable commerce, to alchemical formulations, to the ethnohistorical significance of "the food of the gods." Cacao is part of a greater pharmacopeia of ethnobotanicals that we work with, and we find great joy in infusing medical botany, nutrition, and health into the educational work we are involved in.
Product Development • Recipe Formulation • Ingredient Sourcing
I work with individuals and teams to develop high quality, artisan-grade chocolate products - from molded confections, to functional drinking chocolate, to body products infused with cacao & exotic botanicals. From ingredient sourcing to equipment purchasing to quality assurance and every other step in the process, I help a handful of select clients to fulfill their goals & objectives in natural product development and manufacturing, with a specialty in chocolate and confectionary products and businesses.
Community Supported Chocolate
Chocolate Subscription Service & Community Development Project
In the same way that Community Supported Agriculture connects local farms to communities of food lovers, Community Supported Chocolate is a projected I've created under the Endorfin umbrella to connect lovers of artisan confections to a monthly supply of innovative chocolate creations. The selection in the box changes every month, and may include bars, barks, truffles, drinking chocolates, and more. I also host free
events on a monthly basis for subscribers and anyone interested in attending.
who we are
Mr. Brian Wallace
Chocolate Alchemist & Ethnobotanist
Brian is the founder of Endorfin, and as such he acts as the chief chocolate alchemist & consultant around here. His passion for ethnobotany led him to chocolate, aka Theobroma cacao, which translated from Latin literally means "the food of the gods." Brian enjoys infusing herbs and spices from nearly every continent into his chocolates, making anything from cognitive-enhancing blends for students to aphrodisiac blends for, well…. You get the picture. A while back Brian took his passion for chocolate to the next level by enrolling in a series of master chocolatier and chocolate-making courses in California, Costa Rica, and beyond, which inevitably led to him to coupling his love for medicinal plants & foods with the technological savvy requisite to produce high quality artisan chocolate. Brian believes in nourishing the mind, body, and spirit through all things cacao, and his current mission in life is to spread the chocolate gospel everywhere he goes.
